The Next White House Chef Could Make a Real Impact on the Nation’s Diet
Eat.Drink.Better. has been surveying its own shortlist of contenders for the new White House chef. The most recent profile has been of Chef Bryant Terry, a chef known for his non-profit projects and focus on sustainable meals.
Eat.Drink.Better. asked the chef what his “menu for change” would be. His proposed White House menu is funny, yet thought-provoking:
Bryant Terry: All these dishes would be made using Grub (i.e., healthy, safe, sustainable, affordable, culturally appropriate, and fair food):
Drinks
Social Justice Juice
Anti-Patriarchal PunchStarters
Anti-Colonial Akara
Democratic Dim Sum
Fair Trade TaquitosMains
Three Sisters Sovereignty Stew
Peaceful Poached Salmon with Disarmament Dill Sauce
Progressive Potato Latkes with Love LentilsSides
Universal Health Care Collards
Criminal Justice Reform Rice with Better Schools BeansDessert
Gay and Trans Rights-Roasted Grapes with Red Wine
Wow, it would be great if Chef Bryant Terry, or any chef, brought sustainable eating to the White House. It would demonstrate the White House’s sincerity about climate change and the environmental damage due to our traditional diet. He adds that if he were given the chance to talk to Obama over a meal, he would ask him and Secretary of State Clinton to give up beef. Obama should carefully consider how giving up beef would enhance his image as an arugula-eating elitist. Obviously, only elitists care about the effects of our diet on the environment.
In seriousness, though, I think we should all take a bite from Bryant Terry’s (well-worded) menu and promote some real change.
